- Review: Aromas of citrus juice and clean oak are forward. On the tongue plenty of green apple, lemon, and melon flavors are lively and straightforward. There is a tangy quality, with perhaps a touch of sour bite to the finish, but otherwise a clean and uncomplicated Chardonnay. Serve with cold roast chicken.

Technical NotesHarvest Specs: The grapes for the Girly Girl 2008 Chardonnay came from blocks 9A &9C of the Roza Hills Vineyard. The Chardonnays were crushed and pressed on September 17th & 18th 2008. Average analysis for the juice was 23.6 Brix, 0.60 T.A. and a pH of 3.50.
Vinification: The lots of Chardonnay were treated with 15ml/ton Pec 5 enzyme and 35ppm Sulfur at the crusher. Once pressed, the juice was cold settled for 3 days then racked off solids. MicroEssentials yeast supplement, Diammonium Phosphate, PVPP and bentonite were added prior to alcoholic fermentation. The Chardonnay lots were inoculated with Epernay II and Fermiblanc Arom wine yeasts. The juice was cold fermented at a rate of 1.0 Brix drop per day until the fermentaion was complete.
Aging: Once the fermentations were complete, the wines were cold settled in tank and then racked off fermentation lees. Racked wines had 60ppm K-Metabisulfite added. Biolees was added at the rate of .4g/L to help build mid-mouth structure. Next, the wines were blended and then protein and tartrate stabilized. Once stable, the Chardonnay was DE filtered off bentonite lees. The wine was EK pad filtered and membrane filtered prior to bottling.
